To fully grasp Marsala’s complexity and elegance, we need to journey back to its origins, and Florio knows this well. The Marsala winery has outlined a new way to see and explore Sicily’s most important fortified wine by introducing Vino Florio, the company’s first unfiltered white wine. This wine reveals the initial form of the grapes that, after an extraordinary vinification process, will become Marsala. A product that has long been reserved for the eyes and palates of the people who spent time in the cellar.
Vino Florio is exclusively made from Grillo grapes grown on vineyards overlooking the sea, offering a panoramic view of Isola Lunga, Mozia, Santa Maria and Le Scole, the small islands that guard the Stagnone and its salt pans. Among the vines, you can taste the essence of the sea that gently permeates the grapes, recalling the flavor of seaweed and the saline waters. The fruits are collected only when the bunches, stems and seeds have reached the perfect level of maturation to develop a rich aromatic profile.
Making Vino Florio is a very peculiar journey. It begins with the pressing of whole bunches using a traditional press: a process that captures the magic cultivated in the vineyard and produces musts rich in color, high dry extracts and a surprising salinity that recalls the sea. Fermentation takes place in cement tanks, involving irregular oxygenation that is carefully monitored by the winemaker.
The result is an unfiltered wine with an imposing structure and high alcohol content (15% vol.) and that continuously evolves in the bottles. Vino Florio has the nuances of a red wine disguised as a white one: enveloping aromas of blooming fields, orange blossoms and jasmine that blend with the briny and iodine notes of the sea.
