A hierarchy exists among Chablis producers even within the same wine classification, one based on winemakers who have achieved the utmost quality. Their wines have become something of an obsession among wine lovers to the extent that their prices are now close to those for the jewels of Beaune.
In this third installment (you car read the first two here and here) we will not only look at the best cru but also the various versions offered by the greatest winemakers in order to examine their stylistic differences. Among these two names stand out in the collective imagination of those who love Chablis, two men who are in the pantheon of the all-time great interpreters of Chardonnay: Francois Ravenau and Vincent Dauvissat.
