A pleasing yellow cheese

Those interested in a site dedicated to wine are also curious about those foods that can be paired with certain wines. Being Italian I find it near impossible to savor a wine unless it is accompanied by some fine food. While the food need not be cooked, it must be made from top ingredients, the way certain chesses are. During a recent trip to Sicily I ran across an excellent cheese factory situated in Aidone, in the province of Enna and not far from the Piazza Armerina archeological site.

Casalgismondo is a family farm which cultivates wheat and raises Comisana sheep. The technology they use is the minimum needed to ensure they meet health standards and still allows them to follow traditional production methods including the use of whole raw milk, which thus has not been pasteurized, in order to maintain the aromas and flavors of the sheep’s milk.

Production is certified organic and the cheeses are delicious and include sheep milk ricotta, fresh and aged pecorino sheep’s cheese and the following Piacentinu Ennese (PDO).
