Brace e Gusto in Rome
An all-Calabrian restaurant, from the ownership to the raw materials, which in fact come from a family farm in the province of Cosenza. Protagonist is the large grill that is always lit, for spot-on cooking of meat (especially) and vegetables.
In Rome, in a middle-class neighborhood outside the hustle and bustle of downtown, find this new earthy, meat and vegetable restaurant run by Calabrians Adriano Cipolla and Maurizio Vaineri. Most of the meats and vegetables you will be offered are also Calabrian: in fact, they come from a family farm in San Marco Argentano (CS).
As the name implies, barbecuing is the focus of the restaurant, but the restaurant's menu, with also starters, fritti, bruschette, pizzottelle and desserts, will be able to please the whole family, even the little ones.
The various cuts of meat, even with different maturation periods, you will find them displayed in the beautiful display cases and on the beautiful open counter. You really have a lot of choice.
The meats we tried were very good, flavorful, from the cooking as we requested. So were the barbecued vegetables, cut nice and thick so they didn't get dry. Also good were the charcuterie, polenta with red boar ragout, Roman-style puntarelle, and wine donuts.
The wine list is also good and varied, although it could be more articulated, to match the level of the restaurant, but in any case you will have a good choice. Besides, you know, we at DoctorWine on this aspect are uncontentious!
Very clean venue, for about seventy covers, but we didn't like the tablecloths and non-fabric napkins.
Service was impeccable, courteous and helpful. For a city like Rome, where normally so many places are closed, to find it open on a Sunday night is certainly a very positive note.
