    100% Assyrtiko. Cold maceration for 12 hours. Spontaneous fermentation in stainless steel vats and French oak barriques, American wood and Acacia. The volcanic notes come quickly to the nose with significant marine sensations. The mouthfeel expresses the full complexity of this wine, with its Mediterranean imprint and saline thrust. Toasted notes in the finish.
